Gluten-free diet and free prescriptions for the holidays
Well the holidays are here again. It seems that the years are rushing by. But it's always good to spend quality time with dear friends and family. If you require a gluten free diet holiday ideas here are some recipes for you!
Of Cranberry and Orange Relish
Gluten and Dairy Free Recipe
Ingredients
Makes 2 cups
- 2 cups of fresh or thawed frozen blueberries
- 1 onion / 4 cup red onion
- 1 jalapeño large, seeded and finely chopped
- 2 tablespoons fresh lime juice
- 2 blood oranges or navel oranges, peeled, sectioned, and cut into 1/4-inch pieces, juices reserved
- 2 teaspoons freshly grated ginger (not processed)
- 1 / 2 cup sugar (unrefined sugar)
- 2 stalks celery, peeled to remove chains, cut into 1/4-inch dice
- 1 / 4 cup fresh mint leaves, coarsely chopped
- 1 / 4 cup pecans, toasted, broken into pieces
Getting There
- Place cranberries in food processor and pulse to chop coarsely, about five pulses. Transfer to a bowl medium.
- Add onion, jalapeno, lime juice, orange segments and juice, ginger, sugar and celery and mix gently. Refrigerate least 1 hour and up to 2 days. Just before serving, add the mint and walnuts, and stir to combine.

Gourmet Rice Dressing
Gluten Free Recipe
Ingredients
1 cup chopped onion
1 cup celery with leaves, chopped
4 oz sliced mushrooms
3 tablespoons butter or margarine
1 cup rice, uncooked
2 cups chicken broth gluten-free, boiling point
1 teaspoon salt
pepper to taste
3 / 4 teaspoon gluten poultry seasoning free pen
1 / 2 cup almonds, toasted
Getting There
Saute onions, celery, mushrooms and uncooked rice in butter until vegetables are tender and rice is golden. Put in a buttered 2-quart, shallow casserole. Add the chicken broth and seasonings. Cover the pan and Bake at 350 degrees for 30 to 40 minutes or until rice is tender and liquid is absorbed. Fluff with a fork, sprinkle with almonds. If the pot has no lid, use aluminum sealed at the beginning of the antenna. Makes 5 1 / 2 cups.
Variation
Reduce celery and 1 / 2 cup and add 1 / 2 cup chopped green pepper and cup gluten free ham, cooked and chopped.
3 / 4 GF teaspoon curry powder can be substituted for pepper
